Quiche is a "go-to" in my house for an easy dinner to use up veggies I have on hand, or for a breakfast with friends. It makes a great meal at any time of day and can be packed full of yummy nutrients!
I will forewarn you, I do not have an exact recipe, but the best part is that you can use what you have!
The following quiche is a Mediterranean take on what I usually do! Enjoy friends!
Use as much or as little or different ingredients if you'd like!
Ingredients
Pie crust (home made or store bought)
12 eggs (I usually start with 8 or so and have to add more)
1lb of sausage (you can also use bacon or ham or any preferred meat)
tater tots (or diced potatoes or sweet potatoes)
cherry tomatoes
feta cheese
cheddar cheese
salt and pepper
Instructions
Preheat your oven to 375.
Roll your crust out into two pie dishes, or in my case, a pie dish and a 9x9 square pan.
Add all of your filler ingredients, I started with the meat then added the tater tots, tomatoes, and feta cheese.
Beat your eggs and add seasoning. I usually just use salt and pepper.
Pour your eggs evenly into both pie dishes.
Top with cheddar cheese.
Bake for 35-40 minutes or until eggs are fully set.
