Summer is just starting and I'm already ready to call it quits on all things heat! Our tiny apartment heats up quickly with any amount of cooking so this simple, easy, and tasty Peanut Butter & Jelly Chia Pudding is the perfect snack and dessert for all summer long! An easy base makes this recipe quick to master. Change it up or keep it the same, there are a lot of delicious options to try!
Ingredients
Pudding:
2 cups of unsweetened almond milk (use coconut or regular if you prefer)
3 spoonfuls of peanut butter (optional: for better blending, use powdered peanut butter)
1/4 cup of chia seeds
Maple Syrup to taste
Toppings:
1 spoonful of jelly (I used a no sugar added strawberry jam!)
Fresh fruit and herbs (Next time I eat this I will be adding some sweet mint to my dish!)
Chocolate Chips (optional)
Walnuts, pecans, almonds, or cashews (optional)
Instructions
Mix milk, peanut butter, and maple syrup with a fork or whisk until peanut butter is mostly mixed in.
Add chia seeds and stir until mixed well.
Refrigerate pudding for at least 2 hrs.
Stir pudding and top with jelly, fruit, chocolate or nuts. Use whatever combination sounds tastiest to you!

Note: If the pudding seems too runny after setting for a couple of hours, add an additional spoonful of chia seeds and mix well.
