Any one else love a quick and easily thrown together meal?! I am all about lots of flavor with minimal energy. A quick meal with a quicker clean up is icing on the cake! This one pan meal will have you going back for seconds. Full of protein and veggies, this meal could easily meet AIP, Whole30, and keto diets.
My prayer is through these recipes is that you can find a way to get creative and enjoy cooking. Use veggies you love or experiment with different kinds of sausage, beef or chicken. Cooking should be fun so enjoy the process and let me know what your version looks like!
Ingredients
-1 package of sausage links (my favorite kind is pictured below, but there are also some really good ones with apple for a fall twist on things)
-1 bag of prewashed veggies (or buy the veggies you want and do the work yourself)
-2-3 sweet potatoes
-Splash of oil (I use walnut)
-salt and pepper
Instructions
1.Preheat oven to 400.
2. Dice sweet potatoes (I recommend chopping those babies up pretty small so they cook all the way through).
3. Slice sausage links into bite size coins.
4.Dump everything into a greased 9x13 pan. I usually put the sweet potatoes on the bottom, then sausage, then veggies on top.
5. Drizzle olive oil over the top and sprinkle with salt and pepper.
6. Bake for 30 minutes. I always stir everything really well half way through.
7. Enjoy!
